Outside of editing cells, is there a way for the iOS FlexGrid to capture keystrokes? An example would be CMD-C in order to implement a copy function or the arrow keys to scroll around the screen.

No, there isn't anything in the FlexGrid control on iOS to directly handle keystrokes as you've described. Apple though does provide some support for adding hardware keyboard commands in the UIKeyCommand class. I think (at least in theory) you could add some key commands that could navigate through the FlexGrid by changing the current selection, copy the contents of a cell to the clipboard, etc. I mentioned this to our Product Management as a possibility for further research as a built in feature.

I did have the opportunity to briefly test a FlexGrid app on an iPad with a paired keyboard, and it does look like you get the copy and paste keystrokes for free when you're editing a cell. The other functionality though you would need to implement as described above.
